Stuffed Manicotti Recipe

My Homemade Stuffed Manicotti

I love cooking and I love Italian food. Italian is one of my favorite types of food to cook. I will keep it short and sweet and give you the recipe without all the extra stuff.  

 

I hope you enjoy it!

 

Ingredients needed 
For the Shells:▪️1 pkg Manicotti shells

Filling:▪️1 lb of Italian sausage▪️1 tbs minced Garlic minced▪️1/2 cup chopped parsley▪️ 1/2 cup chopped broccoli crown ▪️3 Cups Baby Spinach chooped▪️1 cup chopped portabella mushrooms▪️1 tsp Kosher Salt▪️1/2 tsp Pepper▪️1 Cup Ricotta (8 oz.)▪️1/2 Cup Shredded Mozzarella▪️

For the Béchamel Sauce:▪️4 Tbsp Butter▪️1/4 Cup Flour▪️3 1/2 Cups Whole Milk▪️3/4 tsp Sea Salt▪️1/2 tsp Black Pepper▪️1/2 Cup Grated Parmesan▪️2 oz cream cheese ▪️3/4 tsp salt ▪️1/2 tsp pepper ▪️1 teaspoon garlic powder

1. Preheat oven 375F and bring a large pot of salted water to a boil for the shells; boil shells according to package directions and then drain and dry on baker's cooling rack

2. Over medium heat brown sausage. Remove sausage, drain grease, and set aside. In the same pan sauté broccoli, spinach, parsley, and mushrooms with salt and pepper, and garlic till tender. Add sausage back to the veggies.
Mix all veggie and meat mix in a food processor with ricotta and mozzarella and blend to a paste.
Use a zip lock bag to pipe in the filling into the shells. After filling the bag with the mix cut one of the corners of the bag. Fill each shell with the mix and place in a large olive oil sprayed baking dish.

3. To make the béchamel cheese gravy, place the pot back on the stove and melt the butter then add the flour; cook the flour for 1 min, mixing constantly, then start gradually adding milk 1 cup at a time, continue whisking till fully incorporated add the salt, pepper, garlic powder, and parmesan; turn the heat to medium-low and cook until the sauce bubbles and thickens then turn off the heat.

Laddle all the bechamel over the shells and then bake for 15-25 minutes till the top is bubbly.

Serve with a salad and enjoy!
